Hi Amy! It should work as is in a 9×13 pan but if you want to be safe you can 1.5x the recipe and make cupcakes with any extra.

Hi, I made this cake for my mother’s birthday and it was amazing! I’d love to use the almond sponge cake recipe to make a number cake for my little brother. Would this recipe work for a 9×13 pan or would I need to make 1.5x of it?

Hi Freya! Do you have a hand mixer? If so for the cake that should be fine. For the frosting it would be a challenge though. I’d recommend going with something like ermine or German buttercream, but you’d still need a hand mixer. For each of these I would make the pudding/custard with coconut milk instead.

Hi Ola! No, I don’t think the oil would work well with the buttercream. You could use coconut extract if you want but I don’t like the flavour of those. If you don’t need a super smooth frosting you could mix some shredded coconut in with it to add more flavour.

Do you think I could substitute the butter for some coconut oil in the merangue frosting in order to not lose the coconut flavour if I can’t find coconut powder?
